September Recipe of the Month – Classic Butternut Squash Soup

Ingredients

Directions

Cut squash into 1-inch chunks. In large pot melt butter. Add onion and cook until translucent, about 8 minutes. Add squash and stock. Bring to a simmer and cook until squash is tender, about 15 to 20 minutes. Remove squash chunks with slotted spoon and place in a blender and puree. Return blended squash to pot. Stir and season with nutmeg, salt, and pepper. Serve.

Sugar Land Wine and Food Festival

Ol’ Railroad Cafe had a wonderful time at the Sugar Land Wine and Food Festival today. The weather was wonderful! The wine was flowing! We were proud to represent our home state of Texas with the Becker Vineyard’s wines. We met some wonderful people today and saw some familiar faces. Our Fried Chicken and Waffles were a huge hit! Thank you to all of the wonderful people who came by our booth to try our Fun take on an American Southern Classic. We hope to see you soon at the restaurant.
